zucchini fresh tomato sauce/Guacamole Pizza Crust: Mix all ingredients in a bowl. Puree in a juicer or finely grind in a food processor. Spread on a teflex sheet into small pizza rounds ½” thick. Salad: 2 cups each of red and green cabbage thinly sliced 1 red pepper/ 1 yellow pepper, seeded and thinly sliced 2 carrots, peeled and grated ½ lb sugar or snow peas, sliced diagonally 1/4” thick 3 green onions, diagonally sliced 1/4" thick 1/8 cup black sesame seeds Dressing: ¼ cup rice wine vinegar ¼ cup vegetable oil 3-4 Tbl agave or maple syrup ½-1 tsp chili flakes or chili oil 2 tsp grated ginger ¼ cup chopped cilantro Celtic salt and pepper to taste Combine dressing ingredients, whisk to emulsify and set aside. In a large bowl combine all the salad ingredients. Add dressing and toss. Sprinkle with black sesame seeds and serve. Durian and Berry Mousse
1 Durian- use 3-4 segments 1 ripe banana 1 ripe avocado 1 ripe mango 1-2 cups berries (blueberries, blackberries, figs) In a food processor or vitamix combine durian, mango, banana,
berries and avocado. Do not over blend. Spoon the mixture into a stemmed wine glass and garnish with fresh berries. Serve on a small plate. This mousse keeps up to one week refrigerated, but will
discolor a little because of the avocado. You may omit the durian. Do not
substitute with any high water content fruits as strawberries. kiwi,
cantaloupe or grapes. .
